Grilled Chicken Rollers
4 sm boneless skinless chicken breast
4 slices american cheese
4 slices bacon
1/4 cup balsamic vinaigrette
Heat grill to medium heat. Pound chicken to 1/4 inch thickness. Top each with american, and roll up tightly. Wrap bacon around long sides of roll covering exposed cheese, stretching bacon as needed to fit, secure with toothpicks. Grill 15 to 20 minutes or until chicken is done. Turning often and brushing with dressing the last 5 minutes. Throw out toothpicks before serving. This also works great with cheddar if desired!

Jen, this is a great recipe! Made it last night for some friends for a dinner party. I made a maple balsamic dressing and an amazing salad that complemented it so well. Oh, and biscuits for our starch!

1 cup olive oil
1/2 cup balsamic vinegar
1/4 cup maple syrup (VT of course!)
salt and pepper (to taste)
cayenne pepper (to taste)
Awesome Salad
red leaf lettuce
kale (marinated in dressing)
red onion , sliced thin (marinated with kale)
crisp apple slices
crushed walnuts
dry cranberries
cheddar cheese cubes
dressed with same dressing
